Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a saucepan of barely simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.

Whip the Cream
In a large mixing bowl, pour the heavy cream. Using an electric mixer, whip the cream until soft peaks form. Be careful not to over-whip. Set aside about 1/4 of the whipped cream for topping later.

Prepare the Egg Yolks
In another bowl, whisk the egg yolks with granulated sugar and vanilla extract until the mixture becomes pale and creamy.

Combine Chocolate and Egg Mixture
Gradually fold the melted chocolate into the egg yolk mixture until well combined.

Incorporate Whipped Cream
Gently fold in the whipped cream into the chocolate and egg yolk mixture in two additions, being careful not to deflate the mixture.

Fold in Egg Whites
Gently fold the whipped egg whites into the chocolate mousse mixture until no white streaks remain. Be gentle to maintain the light and airy texture.

Chill the Mousse
Spoon the mousse into individual serving dishes or glasses. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.

Serve
Before serving, top each mousse with the reserved whipped cream. Optionally, garnish with chocolate shavings or berries.
