Crust Preparation

Prepare the Crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

Form the Crust
Press the mixture evenly into the bottom of a 9-inch springform pan. Bake for about 8-10 minutes or until lightly golden. Remove from the oven and let cool.

Mix the Filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in the granulated sugar, sour cream, and vanilla extract. Mix until well blended.

Add the Eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.

Pour the Filling
Pour the cheesecake filling over the cooled crust in the springform pan, spreading it evenly.

Bake the Cheesecake
Bake in the preheated oven for 50-60 minutes, or until the edges are set but the center is still slightly jiggly. Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour.

Remove from the oven and refrigerate for at least 4 hours or overnight for best results.
Berry Sauce Preparation

Prepare the Sauce
In a medium saucepan over medium heat, combine the mixed berries, granulated sugar, and lemon juice.

Cook the Sauce
Bring the mixture to a simmer, stirring occasionally. Cook for about 10-15 minutes until the berries break down and the sauce thickens slightly.

Cool the Sauce
Remove from heat and let the berry sauce cool completely before serving.

Once the cheesecake is fully chilled, remove it from the springform pan. Slice and serve each piece with a drizzle of the berry sauce on top.
