Prepare steak
Bring skirt steak to room temperature for 20–30 minutes. Pat dry with paper towels. Season both sides evenly with kosher salt, black pepper, and garlic powder; rub with 1 tablespoon olive oil to help the seasonings adhere.
Cook steak
Heat a heavy skillet or cast-iron pan over high heat until smoking lightly (about 3–5 minutes). Add the steak and sear without moving for 2–3 minutes to develop a dark crust. Flip and sear the other side 2–3 minutes for medium-rare (internal temp ~125–130°F / 52–54°C). For medium, cook 3–4 minutes per side.
Finish and rest
During the last 30–45 seconds of cooking, add 1 tablespoon butter to the pan and spoon the melted butter over the steak (baste) to add flavor. Transfer steak to a cutting board, tent loosely with foil, and rest for 5–8 minutes. After resting, slice against the grain into thin strips. Sprinkle with chopped parsley and serve with optional lemon wedges.
Breakfast Potato
Cook vegetables
Heat a large skillet over medium-high heat and add 1 tablespoon olive oil and 1/2 tablespoon butter. Once shimmering, add the diced potato in a single layer. Cook, undisturbed, 4–5 minutes to get a golden surface, then stir or flip pieces to brown other sides for another 4–6 minutes.
Add aromatics & season
Reduce heat to medium. Add the diced onion and green pepper to the potatoes and cook, stirring occasionally, until vegetables are tender and potatoes are cooked through, about 6–8 minutes. Season with smoked paprika, dried thyme, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook 1–2 more minutes to marry flavors. Taste and adjust seasoning. Stir in chopped chives or parsley just before serving.

Fry eggs
When the steak has 5 minutes left to rest and the potatoes are finished, heat a nonstick or small skillet over medium-low heat. Add 1 tablespoon butter and let it melt and foam. Crack two eggs into the pan. Cook until whites are set but yolks remain runny, about 2–3 minutes for sunny-side or 1 minute then flip for over-easy. Season with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
