Combine Nebbiolo grape must (0.5 cups) with Barbera must (0.15 cups) and Croatina/Cabernet-style must (0.08 cups) in a sanitized glass or stainless steel container. Stir gently to homogenize the blend.

Assemble musts

Add 0.05 cups of aged red wine reserve to introduce mature tannin structure and complexity. Add 0.02 cups of neutral finished base wine to bring the total volume close to 750 ml (final adjustments will be made after aromatic additions). Gently stir.

Adjust body and depth

Lightly toast 1 tsp cracked black pepper in a dry pan for 20–30 seconds to bloom the aroma, then steep the warm pepper in 1 tablespoon of the blended wine for 10 minutes. Strain the pepper solids and reserve the infused wine.

Create pepper infusion

Stir in 1/4 tsp black currant concentrate and 1/4 tsp blueberry concentrate into the blend. Taste after each addition — these concentrates are potent, so add slowly to avoid an artificial character.

Add fruit accents

Add the pepper-infused tablespoon of wine to the blend. Taste and adjust: if pepper is too forward, dilute with a small amount of the neutral base wine; if pepper is weak, steep another 5 minutes and add a teaspoon at a time.

Incorporate pepper note

If you plan to store the bottle for more than a few weeks, add 0.05 tsp potassium metabisulfite solution to the blend to help protect against oxidation and microbes. Mix gently.

Stabilize and preserve

If the blend appears cloudy, add 0.25 tsp bentonite (or silica) as a fining agent per package instructions. Stir thoroughly and allow to settle for 24–48 hours in a cool place, then rack off clear wine.

Optional clarifying

Transfer the finished wine into a sanitized 750 ml bottle using a funnel or siphon. Top up to 750 ml if needed with neutral base wine. Seal with a cork or cap.

Bottle

Allow the bottled wine to rest upright for 24 hours, then store on its side in a cool, dark place for at least 2–4 weeks to better integrate flavors. For optimal balance, age for 3–6 months.
