Blend of Chenin Blanc, Chardonnay, Viognier & Colombard. Coastal Region South Africa. Aromas of dried peaches, apricots & ripe citrus.

Chill all component wines (Chenin Blanc, Chardonnay, Viognier, Colombard) to about 10–12°C. Using measured jugs, pour 375 ml Chenin Blanc, 187.5 ml Chardonnay, 93.75 ml Viognier and 93.75 ml Colombard into a sanitized mixing vessel. Gently stir to homogenize the blend for 30–60 seconds, avoiding vigorous agitation that could introduce oxygen.

Combine base wines

Taste the combined blend at serving temperature. Look for the dried peach/apricot aromas, ripe citrus brightness and overall acidity and body. Note whether the blend needs brighter acidity, a touch more fruit aroma or slight sweetness to match the described profile.

Assess balance

If aromas are muted, add up to 1 teaspoon peach essence or 1 teaspoon apricot concentrate and gently stir, then rest 10 minutes and re-taste. If the wine needs a touch of brightness, add a small amount of lemon zest (rubbed briefly in the hand and steeped 2–5 minutes, then removed). If a slight off-dry character is desired, dissolve 1 teaspoon sterile sugar syrup and blend a small portion into the wine, stirring and tasting until the balance feels right. Make adjustments in very small increments to avoid over-flavoring.

Make small adjustments (optional)

When using concentrated essences or liqueurs, add them dropwise while stirring and allow the blend to rest for 10–20 minutes. Re-evaluate aromas and flavor. If the aroma becomes too pronounced, dilute the mixture by removing a small portion and replacing with neutral base wine.

Sanitize the bottle, funnel and siphon. Using a funnel or sterile siphon, transfer the finished blend into a 750 ml bottle, leaving a small headspace (about 1–2 cm). If desired, pass the wine through a sterile filter to remove any particulates before bottling.

Seal the bottle with your chosen closure (cork or screwcap). Label with vintage, blend components and date. Chill to serving temperature (8–12°C) for at least 24 hours to allow aromas to settle, then serve.
