Place the 2021 Stel-Mar Chardonnay in the refrigerator for 1.5–2 hours before serving to bring it to an ideal temperature of 10–12°C (50–54°F). If short on time, set the bottle in an ice bucket with a 50:50 mix of ice and water for 15–20 minutes.

Fill an ice bucket with ice and a small amount of cold water to surround the bottle; keep the bottle in the bucket on the table to maintain temperature during service.

Prepare ice bucket

Carefully cut the foil below the lip, center the corkscrew and insert fully, then pull the cork out steadily. Wipe the bottle neck with a clean cloth or rinse with a splash of cold water to remove any sediment or cork bits.

Open bottle

Pour a 2–4 oz (60–120 ml) tasting pour into a chilled white wine glass for each guest. Hold the bottle at the base and tilt the glass slightly when pouring to minimize splashing and preserve the wine’s aroma. Avoid overfilling; leave room for swirling (fill to about one-third of the glass).

If the wine tastes muted, allow it to warm in the glass for 10 minutes; if it tastes flabby or overly alcoholic, briefly return the bottle to the ice bucket for a few minutes.

Serving temperature check

If you prefer a hint of citrus contrast to the wine’s toasty butter and oak, express a lemon twist over the glass edge and drop it in or serve the twist on the side. This is optional and should be used sparingly so it doesn't overwhelm the Chardonnay's profile.

Use clean, lint-free white wine glasses that have been rinsed with cold water and allowed to air-dry. Hold the glass by the stem when serving to avoid warming the wine with your hand and to keep the bowl free of fingerprints.

Pair the Stel-Mar Chardonnay with dishes that complement its toasty, buttery oak and floral notes. Roast chicken and butternut squash risotto will highlight the wine’s richness; soft triple-cream cheeses echo the buttery texture; grilled shrimp or shellfish with a slight char will pick up the wine’s wood-smoke and coconut nuances.

Tasting sequence: taste the wine neat first to note floral top notes and oak/coconut on the mid-palate. Take a small bite of a neutral bread or the paired food, then taste again to observe how flavors shift—fatty foods will amplify creaminess and reduce perceived acidity; charred or herb-forward foods will accentuate the wine’s toasted oak and subtle spice.

Keep notes: jot down impressions of aroma (floral, toast, coconut), palate (buttery, medium-plus body, oak), acidity (medium), and finish (moderate length with lingering vanilla/char). These notes help you refine serving temperature and pairing choices next time.
