Remove the bottle from refrigeration (if chilled) and allow it to sit upright at room temperature for 15–20 minutes so the wine can open up and reveal its aromas of blackberry, blueberry and black pepper.

Temper and open

If you prefer a softer profile or the wine is youthful, decant into a clean decanter for 30–60 minutes to aerate. For older Nebbiolo-based bottles, decant briefly (10–20 minutes) mainly to separate any sediment.

Decant (optional)

Serve slightly below room temperature: about 16–18°C (60–65°F). If the bottle is warmer, chill in an ice bucket for 8–10 minutes; if too cold, let it warm in the glass for a few minutes.

Serving temperature

Pour 120–150 ml per glass (about 4–5 oz) to allow room for swirling and to concentrate the aroma. Hold the glass by the stem and pour against the inner curve to avoid splashing.

Pouring

Use large-bowled red wine glasses to capture the wine’s aromatic profile. Warm the glass slightly in your hands before tasting to help volatilize aromas.

If using a decanter, pour the bottle in a steady stream and stop when you see the last clear liquid if concerned about sediment. Rinse and dry glasses between different wines to preserve purity of flavors.

Arrange the aged cheese wedges, cured meats, toasted crostini and roasted nuts on a board. Place small bowls of blackberry jam so guests can add a touch to crostini or cheese—this accentuates the wine’s blackberry and black currant notes.

Assemble cheese and charcuterie

Take a small bite of cheese or meat, then sip the wine and let it coat your palate. The wine’s balanced blackberry and blueberry fruit combined with black pepper and currant hints will complement the savory, salty and nutty components. Repeat with different pairing combinations to explore contrasts.

Taste pairing

For a warmer pairing option, grill slices of crusty bread brushed with olive oil and rub with garlic; top with shaved aged cheese and a dot of blackberry jam before serving with the wine.
