Chill the bottle of 2020 Lavis Vivolo Pinot Grigio to serving temperature (approximately 8–10°C / 46–50°F). To chill quickly, place the bottle in an ice bucket with a 1:1 mix of ice and water for 15–20 minutes, or refrigerate for 2–3 hours.

If you prefer a slightly cooler wine, add a few ice cubes to an ice bucket and rest the bottle on them briefly; do not add ice directly to the wine to avoid dilution.

Using chilled white wine glasses, pour about 5–6 ounces (150–180 ml) per glass, filling to the widest part of the bowl to allow aromas to concentrate.

Chill the white wine glasses in the refrigerator for 10–15 minutes before serving if possible. Warm glasses mute aromas.

Optional: Twist a thin strip of lemon peel over each poured glass to express the oils, or rest a dried apple slice on the rim to echo the wine’s ripe fruit notes. Do not overwhelm the wine; garnish should be subtle.

Arrange the soft cheese and thinly sliced prosciutto on a small serving board. Keep the cheese at room temperature for 15–20 minutes prior to serving to maximize creaminess and flavor.

Prepare cheese and charcuterie

Thinly slice the pear or apple and arrange next to the cheese. Scatter toasted almonds or walnuts in a small bowl or on the board for textural contrast.

Prepare fruit and nuts

Drizzle about 2 teaspoons of honey over the cheese or provide the honey in a small dish for guests to add. Add toasted baguette slices or water crackers alongside. The ripe fruit and honey notes in the wine will pair harmoniously with the soft cheese and fruit; the salty prosciutto complements acidity.

Finish the plate

Serve the pairing plate with the poured glasses of 2020 Lavis Vivolo Pinot Grigio. Encourage guests to smell the wine first (to appreciate the deep golden color and warm aromas of ripe fruit and honey) and take small sips to note the balance of fruit, acidity, and finish.
