Ham and Cheese Sandwich

Sliced turkey, lettuce, tomato, and mustard in a whole wheat wrap.

Fit Turkey Wrap

In a large brew kettle, heat 12 liters of filtered water to 165°F (74°C). Add the Mexican lager malt and flaked corn to the kettle. Stir gently to combine, ensuring all grains are submerged in water. Maintain the temperature around 150°F (65°C) for 60 minutes.

Mashing

After mashing, sparge the grains by rinsing them with additional hot water (around 170°F/77°C). Collect the runoff into a separate kettle until you have about 12 liters of wort.

Sparging

Bring the wort to a vigorous boil. Once boiling, add the Hallertau hops and continue boiling for 60 minutes. Monitor the temperature and stir occasionally to prevent scorching.

Boiling

After boiling, cool the wort as quickly as possible using a wort chiller or ice bath until it reaches about 70°F (21°C).

Cooling the Wort

Transfer the cooled wort into a sanitized fermenter. Pitch the Pilsner yeast into the wort and seal the fermenter with an airlock. Allow the beer to ferment at 65-70°F (18-21°C) for about 2 weeks.

Fermentation

After fermentation is complete, dissolve 3 oz of corn sugar in 1 cup of boiling water. Cool the sugar solution and mix it with the beer. Bottle the beer in sanitized bottles, leaving about 1 inch of headspace. Cap the bottles.

Priming and Bottling

Allow the bottled beer to carbonate at room temperature for about 1-2 weeks.

Carbonation

Once carbonated, refrigerate the bottles for a few hours before serving. Enjoy your Rocky Point Light chilled!
