Crush the Nebbiolo grapes to release their juice and pulp.

In a mixing bowl, combine the blackberry puree and blueberry puree with the crushed grapes. Stir well to blend the flavors.

Add the sugar to the fruit mixture and mix until fully dissolved.

Sprinkle the yeast over the mixture and let it sit for about 15 minutes to activate.

Add the black pepper and black currants to the fruit mixture, stirring to incorporate all ingredients evenly.

Transfer the mixture into a fermentation container, ensuring there is enough headspace for fermentation.

Cover the fermentation container with an airlock to allow gases to escape while preventing contaminants from entering.

Primary Fermentation

Let the mixture ferment at room temperature (around 18-22°C) for about 7-10 days, stirring daily.

After primary fermentation, siphon the wine into clean bottles, leaving some space at the top.

Secondary Fermentation & Bottling

Seal the bottles with corks or caps and store them in a cool, dark place.

Allow the wine to age for at least 6 months for optimal flavor.
