Mix and chill
Place a mixing glass or shaker over ice. Add 2 oz bourbon, 0.25 oz simple syrup, 2 dashes chocolate bitters and 1 dash Angostura bitters (if using). Stir gently for 20–30 seconds until well chilled and slightly diluted.
Prepare glass
If using, chill an Old Fashioned glass by filling it with ice and setting it aside, or place your serving glass in the freezer for a few minutes. Discard the chilling ice before straining if used.
Strain
Strain the chilled cocktail over a single large ice cube (or fresh ice) in the prepared Old Fashioned glass.
Garnish
Add cherries
Thread the 2 brandied cherries on a cocktail pick and place them on or beside the ice in the glass.
Shave chocolate
Using a vegetable peeler or microplane, shave the 0.25 oz piece of dark chocolate directly over the finished drink so a light dusting falls on the surface and cherries. Aim for thin, airy curls rather than heavy chunks.
Finish with orange aroma (optional)
Express an orange peel over the drink by holding it skin-side down above the glass and giving it a firm pinch to spray oils over the surface; rub the peel around the rim if desired and drop or discard.
