Method
Cocktail
- 1
Combine and shake
Add 2 oz white rum, 0.75 oz apricot brandy, 0.5 oz orgeat syrup, 2 oz fresh pineapple juice, 0.5 oz fresh lime juice, and 0.25 oz maraschino cherry liqueur (if using) into a cocktail shaker.
- 2
Add ice and shake
Fill the shaker two-thirds with ice. Secure the lid and shake vigorously for 12–15 seconds until the outside of the shaker is cold and slightly frosted.
- 3
Prepare glass
Fill a double old-fashioned glass or tiki mug with crushed ice (about 1 cup).
- 4
Strain
Double-strain the shaken cocktail over the crushed ice using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and pulp.
Garnish & Finish
- 5
Top the drink with a fresh pineapple wedge and a maraschino cherry on a pick. If desired, grate a very light pinch of fresh nutmeg over the top for an aromatic accent.
- 6
Serve immediately with a short straw. Enjoy chilled; the orgeat and apricot brandy provide a floral, nutty sweetness that balances the bright pineapple and lime—an ideal summer sipper.
