Prepare the sausage

If the saucisson is whole, trim any waxed paper or netting. Slice the saucisson into 1/2-inch (about 1.25 cm) rounds. Reserve a few nice-looking slices for garnish if desired.

Sauté aromatics

In a medium heavy-bottomed saucepan, melt the unsalted butter over medium heat. Add the finely minced shallots and cook 3–4 minutes until softened and translucent but not browned. Add the minced garlic and cook 30–45 seconds until fragrant.

Deglaze and simmer

Add the dry white wine to the pan to deglaze, scraping up any fond from the bottom. Bring to a gentle simmer and reduce for 2–3 minutes until slightly reduced.

Add stock and aromatics

Pour in the chicken stock, add the bay leaf, thyme sprigs, and crushed peppercorns. Add the sliced saucisson into the simmering liquid. Bring to a gentle simmer, then reduce heat to low and cook gently for 10–12 minutes to allow the sausage to release flavor into the broth.

Adjust seasoning and strain

Taste the broth and add up to 1/2 teaspoon additional salt if needed (remember the saucisson is salty). Remove and discard the bay leaf and thyme stems. Using a slotted spoon, remove the saucisson slices to a small plate. If you prefer a clear consommé-style liquid, strain the broth through a fine mesh sieve into a clean saucepan; otherwise leave the broth with suspended aromatics for a rustic presentation.

Temper egg yolks

In a small bowl whisk the egg yolks with the heavy cream, Dijon mustard, and a pinch of freshly ground black pepper until smooth.

Temper into hot broth

Ladle about 1/3 cup of the hot broth into the egg-yolk mixture while whisking constantly to gently raise its temperature (tempering). Repeat with another 1/3 cup. Then slowly pour the tempered yolk mixture back into the saucepan with the remaining hot broth over very low heat, stirring constantly. Do not let the liquid boil — maintain a gentle steam. Cook for 2–3 minutes until the broth thickens slightly into a silky, velouté-like sauce.

Finish and season

Remove the pan from heat. Stir in the chopped parsley and lemon juice. Taste and adjust seasoning with additional pepper or a small pinch of salt if necessary. Add back the reserved saucisson slices and gently warm them in the sauce for 30–60 seconds.

To Serve

Arrange warmed saucisson slices in shallow bowls or wide-rimmed soup plates. Spoon the warm creamy broth over the slices, making sure each serving gets several pieces and a generous amount of sauce.

Serve immediately with sliced rustic bread or baguette (lightly buttered if desired) and cornichons on the side. Garnish with an extra sprinkle of chopped parsley and a grind of black pepper.
