For the Phony Negroni (per cocktail)

Preparation

Chill glass

Place an old-fashioned glass in the freezer or fill it with ice and water to chill while you prepare the cocktail (5 minutes).

Prepare garnish

Using a vegetable peeler or sharp knife, cut a 2- to 3-inch strip of orange peel. Trim off excess pith so the peel is mostly bright orange. Set aside.

Assembly

Discard the chilling ice/water from the glass if used. Add 1 oz non-alcoholic bitter aperitif, 1 oz non-alcoholic vermouth-style alternative, and 1 oz non-alcoholic botanical spirit into a mixing glass or directly into the chilled old-fashioned glass.

Add 3 large ice cubes (or 1 large sphere) to the mixing glass. If assembling directly in the serving glass, add ice to the glass instead.

Stir the mixture gently with a bar spoon for about 20–30 seconds until the drink is well chilled and slightly diluted (about 15–20% dilution). If you prefer a quicker chill, stir 10–15 seconds but aim for proper dilution to balance flavors.

Taste once. If you prefer the Phony Negroni slightly sweeter, add up to 1/4 teaspoon simple syrup and stir once more. For a brighter orange lift, add 1 dash non-alcoholic orange bitters and stir gently to incorporate.

Express the orange peel over the drink: hold the peel with the outer (orange) side facing down over the glass and give a sharp squeeze so oils spray onto the surface. Run the peel around the glass rim, then drop it into the drink as garnish.

Serve immediately on the rocks. Encourage sipping slowly to appreciate the bitter, sweet, and botanical interplay.

Notes & variations

Batching: multiply ingredient quantities by number of servings, keep ice and garnish separate. Stir the batch with ice in a large pitcher or mixing container, then decant into glasses over fresh ice.

If you cannot find a botanical non-alcoholic spirit, increase the vermouth-style alternative to 1.25 oz and reduce the bitter aperitif to 0.75 oz to maintain balance, then adjust with a touch of simple syrup if needed.
