Cardamom-Honey Syrup

Toast and bruise cardamom

Lightly toast 6 green cardamom pods in a dry skillet over medium heat for 1–2 minutes until fragrant. Remove from heat and bruise pods with the back of a spoon to crack them open and release seeds.

Make syrup

Combine 1 cup water and 1 cup granulated sugar in a small saucepan over medium heat. Add the bruised cardamom pods and optional star anise. Stir until sugar dissolves and bring to a gentle simmer, then lower heat and simmer 4–5 minutes to infuse. Remove from heat, stir in 2 tablespoons honey until incorporated. Let the syrup steep for 15–20 minutes off the heat for stronger cardamom flavor, then strain through a fine mesh sieve into a heatproof container. Discard solids. Chill before use.

Citrus & Agave Mix

Measure 3/4 cup freshly squeezed lemon juice (about 4–5 lemons depending on size). In a small pitcher or jar, combine the lemon juice with 3 tablespoons agave nectar and 1/4 cup cold water. Whisk or shake until the agave is fully incorporated. Taste and adjust: if too tart, add up to 1 tablespoon additional agave; if too sweet, add a splash more lemon or 1–2 tablespoons cold water. Chill briefly if desired.

Assembler & Garnish

Prepare glasses: Fill two highball or Collins glasses with ice (about 1 cup ice each).

Build the drink: For each serving (this recipe yields 2 servings): Into each glass over ice add 4 tablespoons (2 oz / 60 ml) Seedlip (or nonalcoholic spirit), 1/4 cup (60 ml) chilled apple cider, and 2 tablespoons (30 ml) of the citrus & agave mix. Then add 1 tablespoon (15 ml) of the chilled cardamom-honey syrup. Gently stir once to combine.

Top and finish: Top each glass with 1/2 cup (120 ml) chilled club soda (adjust to taste) to give effervescence. Give a gentle stir to marry layers without flattening the soda.

Garnish and serve: Garnish each drink with a thin lemon wheel or twist perched on the rim, a lightly crushed cardamom pod or two dropped in, and an optional thin apple slice. Serve immediately.

Batching note: To batch for a party, multiply the liquid components and prepare the cardamom-honey syrup and citrus/agave mix in advance. Add soda just before serving to preserve fizz.
