Chop and melt chocolate

Chop the chocolate into small, uniform pieces so it melts evenly. Place chocolate, butter, and espresso (or hot water) in a heatproof bowl.

Set the bowl over a saucepan of gently simmering water (double boiler), making sure the bowl doesn't touch the water. Stir frequently until the chocolate and butter are fully melted and smooth. Remove from heat and let cool for 5–7 minutes but remain pourable.

Eggs & Sugar

Prepare egg yolks

Whisk the egg yolks with the granulated sugar until the mixture is thickened, pale, and slightly ribboning when the whisk is lifted, about 2–3 minutes by hand or 1 minute with an electric mixer.

Temper the yolks: pour about 2 tablespoons of the warm melted chocolate into the yolk mixture while whisking constantly to prevent scrambling. Then slowly whisk the tempered yolks back into the rest of the melted chocolate until fully combined. Stir in a pinch of salt.

Whip egg whites

In a clean, grease-free bowl, whip the egg whites until foamy. Gradually add a tiny pinch of sugar (or use 1/2 tsp from the granulated sugar) and continue whipping to soft peaks, then to stiff but glossy peaks. Be careful not to overbeat.

Fold whipped egg whites into the chocolate-yolk mixture in three additions: add one-third and fold gently to lighten the base, then fold in the second and third additions until no white streaks remain. Use a spatula and a gentle lift-and-fold motion to keep maximum air.

Cream

Whip cream

Whip the cold heavy cream with the vanilla extract (and powdered sugar if using) to soft peaks. Do not overwhip; it should be billowy and smooth.

Fold the whipped cream into the chocolate-egg mixture in two additions: fold one-third to loosen the mixture, then gently fold the remainder until fully incorporated and homogenous, keeping as much volume as possible.

Assemble & Chill

Spoon the mousse into individual serving glasses or a single bowl, dividing evenly. Smooth the tops with a spatula or leave textured for a rustic look.

Dust the surface lightly with unsweetened cocoa powder and top with shaved chocolate or chocolate curls if desired.

Cover and refrigerate for at least 2 hours, preferably 3–4 hours, until set and chilled. For best texture, prepare up to 24 hours ahead.

Serve

Remove mousse from the refrigerator 5–10 minutes before serving to take the chill off slightly. Garnish with additional whipped cream, berries, or mint if desired.
