Prepare fruit

Drain canned lychee well. Reserve 1 tablespoon of the syrup from the can if you want extra lychee aroma; otherwise discard syrup. If using fresh lychee, peel and remove seeds to yield 8 pieces.

Blend base

In a blender, combine drained lychee, pineapple chunks, fresh lime juice, reserved lychee syrup (or simple syrup, if using), and cold water. Blend on high until smooth and slightly pulpy, about 20–30 seconds. Taste and adjust sweetness with additional simple syrup (add by 1 tsp / 5 ml increments) if needed.

Strain (optional)

For a smoother beverage, pass the blended mixture through a fine mesh strainer into a bowl, pressing with a spoon to extract as much liquid as possible. This step removes larger fibers but is optional if you prefer a pulpy texture.

Carbonation & Finish

Assemble drink

Fill two tall glasses with ice (about 1 cup / glass). Divide the strained or unstrained lychee-pineapple base evenly between the glasses (about 120–150 ml per glass depending on straining).

Top with soda

Gently pour lime-flavored soda or club soda over the fruit base in each glass, dividing it evenly (about 180 ml per glass). Stir once gently with a bar spoon to integrate the layers without flattening the carbonation.

Garnish and serve

Garnish each glass with a lime wheel on the rim, a peeled lychee placed on a cocktail pick, and a sprig of mint if desired. Serve immediately while fizzy.
