Prepare Cheeses

    Bring to room temperature

    Remove Ossau-Iraty, Marbled Goat with Espelette, and Cabot Clothbound Cheddar from refrigeration 30–60 minutes before serving. Allowing cheeses to come to room temperature (about 68–72°F / 20–22°C) maximizes flavor and texture.

    Portion and label

    Keep each cheese whole or cut into serving-sized pieces: leave Ossau-Iraty as a wedge (approx. 6 oz), slice Marbled Goat in half or into 1/2-inch rounds (approx. 5 oz), and cut Cabot Clothbound Cheddar into a 3/4-inch slab or bite-sized cubes (approx. 6 oz). Arrange a small handwritten or printed label near each cheese so guests know which is which.

Assemble Board

    Place cheeses on board

    Position the three cheeses spaced across the board to allow room for cutting and accompaniments. Place one soft or spreader knife with the Marbled Goat, a harder knife with the Ossau-Iraty, and a firm cheese knife with the Cabot Cheddar to avoid cross‑contamination of flavors.

    Add condiments

    Spoon quince paste into one small bowl and fig jam into another. Pour honey into a small bowl or jar; add whole grain mustard to a third bowl. Place these bowls around the cheeses so each cheese has at least one complementary condiment nearby. Position cornichons or pickles in a cluster near the cheddar and olives or pickles if desired.

    Arrange breads, crackers and nuts

    Fan sliced baguette or country bread near the board edge. Scatter water crackers and seeded crackers in small piles. Place Marcona almonds in a small bowl or pile them between cheeses.

    Add fruit and garnish

    Arrange grape clusters and thin apple or pear slices in small bunches around the board. Tuck rosemary or thyme sprigs among the cheeses for aroma and visual appeal.

Serving and Pairing

    Suggest tasting order: start with the mildest and move to the most assertive. Recommended: Marbled Goat with Espelette first (creamy, tangy, subtle pepper heat), then Ossau-Iraty (nutty, slightly sweet sheep’s-milk flavor), and finish with Cabot Clothbound Cheddar (robust, savory, farmhouse tang).

    Pairings: offer a light white wine (Txakoli or Sauvignon Blanc) or a medium-bodied red (Garnacha or Pinot Noir) and a hoppy or saison-style beer. Encourage guests to try cheeses with different condiments: quince paste with Ossau-Iraty, honey or fig jam with Cabot Cheddar, and crackers or bread with the goat cheese.

    Maintenance: replenish bread and crackers as needed. Keep perishables (sliced fruit) chilled until 5–10 minutes before serving. Leftover cheese can be wrapped in wax paper and stored in the refrigerator; allow to come to room temperature before enjoying later.
