Prepare the Chicken
Preheat your grill or oven to medium-high heat. Season the chicken breasts with olive oil, salt, black pepper, garlic powder, and paprika.
Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Once done, remove and place on paper towels to drain excess grease.
Grill the Chicken
Place the seasoned chicken breasts on the grill or in the oven. Cook for about 6-7 minutes on each side until fully cooked and no longer pink in the center.
Add Cheese and Bacon
During the last 2 minutes of cooking, top each chicken breast with crispy bacon and Monterey Jack cheese. Close the grill lid or oven door to melt the cheese.
Assemble the Sandwich
Remove the chicken from the grill or oven. Place each chicken breast on a dinner roll and top with salsa and guacamole. Serve immediately.
