Form the patty

Place 0.25 lb ground beef on a clean surface or in a bowl. Lightly shape into a small, even patty about 3–3.5 inches in diameter and about 1/2 inch thick. Avoid overworking the meat. Make a shallow indentation in the center with your thumb to prevent doming during cooking.

Season

Season both sides of the patty with about 1/4 tsp black pepper and 1 tsp salt, distributing evenly.

Cook the patty

Heat a skillet or griddle over medium-high heat. Add 1 tablespoon unsalted butter and let it melt and foam. When the butter is hot and shimmering (about 30–45 seconds), place the patty in the pan. Cook for 2.5–3 minutes on the first side without moving it so a crust forms. Flip and cook the second side for 1.5–2 minutes for a juicy, slightly pink center (adjust to 2.5–3 minutes if you prefer fully cooked).

Melt the cheese

With about 30–45 seconds left in the cooking time on the second side, place 1 slice American cheese on top of the patty. Cover the pan with a lid or use a metal bowl to trap steam and melt the cheese quickly (about 30–45 seconds). Remove from heat once cheese is melted and the internal temperature reaches at least 160°F (71°C) if you want well-done.

Toast the bun

While the patty rests for 1 minute, slice the small hamburger bun and spread 1 teaspoon mayonnaise on the inside of the top half. Place both halves, cut side down, in the same skillet over medium heat for 30–45 seconds until lightly toasted and golden. Watch carefully to avoid burning.

Assemble the burger

Place the toasted bottom bun on a plate. Add the melted-cheese patty on top. Add 2 dill pickle slices, 1 teaspoon ketchup (spread on top of the patty or bun as preferred). If using, add 1 leaf lettuce and 1 thin tomato slice. Top with the bun top (mayonnaise side down).

Serve

Cut the burger in half if desired for easier handling by small children. Serve warm. Optional sides: a small handful of baby carrots, apple slices, or a few baked fries.

All ingredient quantities are for one kids cheeseburger. Multiply ingredients and cooking time accordingly for multiple servings. To reduce sodium for young children, decrease added salt to 1/4–1/2 tsp or omit and rely on cheese and condiments for flavor.
