Thaw & Dry

If using frozen shrimp, thaw overnight in refrigerator or place sealed shrimp in a bowl of cold water for 10–20 minutes until pliable. Pat shrimp very dry with paper towels — dry shrimp sears better and won’t steam.

Season

Place dried shrimp in a bowl. Add kosher salt, black pepper, paprika, garlic powder and red pepper flakes (if using). Toss or stir until shrimp are evenly coated.

Cook

Heat Pan

Set a large skillet or sauté pan over medium-high heat. Add olive oil and allow it to shimmer but not smoke, about 1 minute.

Sear Shrimp

Add seasoned shrimp to the pan in a single layer, giving them space (cook in two batches if needed). Cook undisturbed for 1.5–2 minutes until the underside is pink and lightly browned.

Flip & Finish

Flip each shrimp and add the tablespoon of butter. Continue cooking for another 1–2 minutes until shrimp are opaque throughout and firm to the touch (internal temperature ~120–135°F; do not overcook). Spoon melted butter and oil over shrimp as they finish to glaze them.

Add Lemon & Herbs

Remove pan from heat. Immediately add fresh lemon juice and chopped parsley, toss briefly to combine and coat shrimp.

Taste and adjust seasoning, adding a pinch more salt or a squeeze of lemon if desired. Serve immediately while hot.
