Method
Prepare crab and liquid
Rinse and check crab
Rinse the whole 1.5 lb Bairdi crab under cold running water to remove grit. Using kitchen shears or a small brush, remove any loose debris from legs and shell. Pat dry with paper towels.
Prepare poaching/steaming liquid
In a large pot with a tight-fitting lid (big enough to hold the crab), combine 6 cups water, 1 cup dry white wine (optional), 1 bay leaf, whole peppercorns, and 1 tablespoon salt. Bring the liquid to a rolling simmer over medium-high heat.
Season exterior
While the liquid heats, rub the crab lightly with 1 tablespoon kosher salt, 1 teaspoon freshly ground black pepper and 1 tablespoon Old Bay seasoning. Set aside. Slice the lemon in half; reserve half for the cooking liquid and half for serving.
Cook crab
Poach or steam
Option A — Poach: Gently lower the seasoned whole crab shell-side up into the simmering liquid. Cover, reduce heat to maintain a gentle simmer, and poach for 8–10 minutes for a 1.5 lb crab (crab will turn bright red and meat will be opaque). Option B — Steam: If using a steamer insert, place crab on the rack above the simmering liquid, cover, and steam for 9–11 minutes. Timing may vary slightly — avoid overcooking.
Rest
When cooked, use tongs to transfer the crab to a cutting board. Cover loosely with foil and let rest 5 minutes to allow juices to redistribute and make handling easier.
Prepare garlic butter and finish
Make garlic butter
While the crab rests, melt 4 tablespoons unsalted butter in a small saucepan over low heat. Add 2 cloves minced garlic and cook gently 1–2 minutes until fragrant (do not let the garlic brown). Remove from heat and stir in 2 tablespoons chopped fresh parsley and a pinch of salt. Keep warm.
Break down crab
Using kitchen shears or a crab cracker and a small fork, remove the apron and top shell, discard the gills and any viscera. Rinse briefly if desired and then separate the body from the legs and claws. Crack claws and leg joints to expose meat for easy eating. Break body in half to access lump meat.
Notes and tips
Cooking times are for a whole 1.5 lb Bairdi crab. If you have multiple crabs or a significantly larger specimen, increase time slightly. Do not overcook — crab meat becomes rubbery. Use the cooking liquid for a flavorful base for seafood stock if desired.
