Prepare
Place 8 slices of bread on a clean work surface. If using mayonnaise, spread about 1 teaspoon on one side of each bread slice; otherwise, spread butter evenly (about 1/2 tablespoon) on one side of each slice. The buttered/mayonnaise side will be the outside of the sandwich.
Assemble
Flip four slices so the unbuttered sides face up. On each, place two slices of cheddar cheese (or about 1/4 cup shredded mozzarella) in the center leaving a small border. If using ham/turkey or thin tomato slices, add them on top of the cheese. Top each with the remaining bread slice, buttered side up.
Grill first side
Place sandwiches in the preheated skillet, buttered side down. Cook for 3–4 minutes, gently pressing down with a spatula every minute to encourage even contact. Check underside after 3 minutes — it should be golden brown. If it browns too quickly, reduce heat.
Flip and finish
Carefully flip each sandwich with a spatula. Cook the second side for another 2–3 minutes, pressing occasionally. Reduce heat to low and cover the pan with a lid for 1–2 minutes if cheese hasn't fully melted; the trapped heat helps melt the cheese without over-browning the bread.
Rest and cut
Transfer sandwiches to a cutting board and let rest for 1 minute (this keeps melted cheese from spilling out when cut). Cut each sandwich diagonally into two triangles or into sticks for little hands. Serve warm.
Serving suggestions
Serve with carrot sticks, apple slices, or a small cup of tomato soup for dipping. For younger kids, cut into small fingers and check temperature before serving.
