Prepare eggs

Crack 3 large eggs into a bowl. Whisk with 2 tablespoons whole milk, 1 teaspoon salt, and 1 teaspoon black pepper until combined and slightly frothy (about 20–30 seconds).

Cook scrambled eggs

Heat a nonstick skillet over medium-low heat and add 1 tablespoon unsalted butter. When butter melts and foams, pour in the egg mixture. Let sit undisturbed 10–15 seconds until edges begin to set, then gently push eggs from the edges toward the center with a silicone spatula, folding them over until soft curds form. Remove from heat when still slightly glossy (eggs continue to cook). Sprinkle 1/2 cup shredded cheddar over the eggs and fold gently until melted. Keep warm.

Toast bread or biscuit

Heat another skillet or griddle over medium heat and add 1 tablespoon butter. For texas toast: place 2 slices buttered side down and toast 2–3 minutes until golden, flip and toast another 1–2 minutes. For biscuit: slice open and warm cut sides in the pan 1–2 minutes until lightly browned.

Warm sausage / bacon / ham

If using pre-cooked sausage patties, bacon, or ham, warm them in the skillet for 1–2 minutes per side until heated through and slightly crisp at the edges. If using raw sausage, cook patties over medium heat until internal temperature reaches 160°F (about 5–7 minutes per side depending on thickness).

Assemble sandwich

Place warmed bottom slice of texas toast or bottom half of biscuit on a plate. Layer with warmed sausage (or bacon/ham), spoon the cheesy scrambled eggs over meat, then top with the other slice of toast or biscuit half. Press lightly and serve immediately with home fries on the side.

Prepare potatoes and veg

Wash and peel the potatoes if desired. Cut potatoes into 1/2-inch dice for even cooking. Finely dice 1/2 small yellow onion and 1/4 bell pepper.

Par-cook potatoes (optional for faster cooking)

Place diced potatoes in a pot of salted water, bring to a simmer and cook for 5 minutes until just beginning to soften. Drain and pat dry. (Alternatively, skip this step and cook a bit longer in the skillet.)

Cook home fries

Heat a large skillet over medium-high heat and add 2 tablespoons vegetable oil. When oil shimmers, add potatoes in an even layer. Let cook without stirring 3–4 minutes to develop a crust, then stir and cook another 3–4 minutes. Add diced onion and bell pepper, then season with 1/2 teaspoon smoked paprika, 1/4 teaspoon garlic powder, 3/4 teaspoon kosher salt, and 1/2 teaspoon black pepper. Continue to cook, stirring occasionally, until potatoes are tender and browned, about 6–8 more minutes. Taste and adjust seasoning.

Finish and serve

If desired, stir in 1 tablespoon chopped fresh parsley for brightness. Transfer home fries to the plate alongside the sandwich and serve hot.
