Strawberry Simple Syrup

    Combine and simmer

    Place chopped strawberries, granulated sugar, and 1 cup water in a small saucepan over medium heat. Stir to combine and bring to a gentle simmer. Once simmering, mash the strawberries with a wooden spoon or spatula to release juices.

    Reduce and infuse

    Lower heat and simmer gently for 6–8 minutes until the sugar is dissolved and the mixture has slightly thickened. Stir in lemon zest if using during the last minute of simmering.

    Strain and cool

    Remove from heat and let cool slightly (5 minutes). Pour the syrup through a fine-mesh sieve into a heatproof container, pressing on the solids to extract as much liquid as possible. Discard solids. Chill the syrup in the refrigerator until cold (about 30 minutes). This yields roughly 3/4 cup syrup; refrigerate any extra for up to 2 weeks.

    Juice lemons

    If you haven't already, juice fresh lemons to produce 1 cup (about 4–6 medium lemons). Strain out seeds and excess pulp if desired for a smoother lemonade.

    Mix base

    In a large pitcher (at least 1.5 liters), combine 8 fl oz Tito's Handmade Vodka, 1 cup fresh lemon juice, 3 tablespoons chilled strawberry simple syrup, and 1 cup cold water. Stir vigorously to combine. Taste and adjust sweetness by adding up to 1 more tablespoon syrup or adjusting water to achieve your preferred balance.

    Add ice and chill

    Add 4 cups of ice to the pitcher or fill individual glasses with ice. If making ahead, keep the mixture chilled in the refrigerator and add ice just before serving so it doesn't dilute excessively.

    Serve

    Pour the strawberry lemonade over ice into glasses. Garnish each glass with a lemon wheel, a slice of strawberry, and a sprig of mint. Optionally stir gently before serving.
