Method

Prepare Glass

  1. 1

    Rim the glass

Rub the lime wedge around the rim of a rocks or coupe glass. Dip rim into coarse salt or Tajín to coat evenly. Set glass aside.

Muddle & Build

  1. 2

    Muddle aromatics

In a shaker or mixing glass, add 4 jalapeño slices (remove seeds if you want milder heat), 4 cilantro leaves and a pinch (about 1/8 tsp) of kosher salt. Gently muddle 6–8 times—just enough to release jalapeño oils and cilantro aroma without pulverizing into bits.

  2. 3

    Add liquids

Add 2 oz blanco tequila, 1 oz fresh lime juice, 0.75 oz triple sec, and 0.5 oz agave nectar into the shaker with the muddled ingredients.

  3. 4

    Add ice and shake

Fill the shaker with ice (about 1 cup) and shake vigorously for 12–15 seconds until the exterior of the shaker is cold and well-chilled.

Strain & Serve

  1. 5

    Double strain

Double strain the cocktail into the prepared glass (use a Hawthorne strainer and a fine mesh strainer) to remove jalapeño and cilantro solids for a smooth drink.

  2. 6

    Garnish

Float one thin jalapeño slice on top and add a lime wheel or wedge to the rim. Optionally slap a small cilantro sprig and place it on the drink for aroma.

  3. 7

    Adjust and enjoy

Taste carefully. If you'd like it sweeter, stir in an additional 0.25 oz agave. For more heat, steep an extra jalapeño slice briefly in the shaker next time or muddle seeds. Serve immediately.
