    Thaw (if frozen)

    If using frozen crab legs, transfer them to the refrigerator for 8–12 hours or run under cold water for 20–30 minutes until pliable. Pat dry with paper towels.

    Using kitchen shears or a sharp knife, optionally cut along the length of the top shell of each leg to expose meat for easier eating after cooking. Keep in mind this is optional; legs can also be served intact.

    In a large stockpot or wide pan, combine water, white wine, kosher salt, bay leaves, peppercorns, and the halved lemon (cut side down). Bring the liquid to a gentle simmer over medium heat. Do not boil vigorously; maintain a gentle simmer to keep the crab meat tender.

    Add the crab legs to the simmering liquid. If legs are too large for the pot, bend and tuck them so they fit—they will separate at the joints if necessary. Cover the pot tightly.

    Simmer for 5–7 minutes if thawed, or 8–10 minutes if still partly frozen. Because the snow crab legs are typically pre-cooked, you are reheating and infusing flavor rather than cooking through. The meat should be hot throughout and fragrant.

    Turn off the heat and let the crab sit covered for 1–2 minutes to allow carryover warming. Using tongs, transfer crab legs to a large platter lined with foil to retain heat.

Finishing Butter & Garnish

    While the crab is finishing, melt the unsalted butter in a small saucepan over low heat or in a microwave-safe container for 20–30 seconds until fully melted but not boiling.

    Add minced garlic to the melted butter and warm over low heat for 1 minute to bloom the garlic (do not brown). Remove from heat and stir in fresh lemon juice, sea salt, black pepper, chopped parsley, and optional Old Bay seasoning. Taste and adjust seasoning as needed.

    Pour about half of the garlic butter over the crab legs on the serving platter to glaze them lightly. Reserve the remainder in a small warmed bowl for dipping at the table.

Serve

    Arrange lemon wedges around the crab legs. If using, place crusty bread or prepared corn alongside to absorb juices and butter.

    Provide crab crackers or kitchen shears and small forks for guests to extract meat. Serve immediately while hot.

    Leftover cooked crab legs can be refrigerated in an airtight container for up to 2 days or frozen. Reheat gently by steaming or in a warm oven wrapped in foil.
