    Muddle mint

    In a cocktail shaker, add the fresh mint leaves and simple syrup. Gently muddle 6–8 times — press to release oils but do not shred the mint.

    Add liquids

    Add Patrón Silver tequila (2 oz), fresh pineapple juice (3 oz), fresh lime juice (0.75 oz), and Cointreau (0.5 oz) into the shaker with the muddled mint.

    Add bitters and ice

    Add 2 dashes of Angostura bitters and fill the shaker with cubed ice until about three-quarters full.

    Shake

    Secure the shaker and shake vigorously for 12–15 seconds until the outside of the shaker is frosty and well chilled.

Serve & Garnish

    Prepare glass

    If using salt, lightly rim one side of a rocks glass with a lime wedge and dip the rim into flaked sea salt or smoked salt (optional). Fill the glass halfway with crushed ice.

    Double strain

    Double-strain the shaken cocktail over the crushed ice in the prepared glass using both the shaker strainer and a fine mesh strainer to remove mint bits and small ice shards for a clean texture.

    Top and finish

    Top with a small cascade of crushed ice if desired. Place a pineapple wedge on the rim and garnish with a fresh mint sprig. Optionally clap the mint between your hands first to release aromatics.
