Method
Strawberry Daiquiri Layer
- 1
Prepare rim (optional)
If you want a sugared rim, rub a lime wedge around the glass rim, then dip the rim into granulated sugar and set the glass aside.
- 2
In a blender add strawberries, white rum (2 oz), lime juice (1 oz), simple syrup (0.5 oz) and 1 cup crushed ice.
- 3
Blend on high until completely smooth and slushy, about 20–30 seconds. Taste and adjust sweetness with a little extra simple syrup if needed.
- 4
Pour or spoon the strawberry slush carefully into the serving glass to fill half of it. Use the back of a spoon to help create a flat layer if desired. Place the glass briefly in the freezer or set aside while you make the second layer to keep separation.
Piña Colada Layer
- 5
Rinse the blender (or use a second blender) and add pineapple chunks, white rum (2 oz), cream of coconut (2 oz), heavy cream (0.5 oz) and 1 cup crushed ice.
- 6
Blend on high until smooth and creamy, about 20–30 seconds. If mixture is too thick to pour, add 0.5–1 oz pineapple juice or water to reach a pourable slush consistency.
- 7
Gently pour the piña colada slush over the back of a spoon onto the strawberry layer so it floats and creates the classic two-tone Miami Vice look. Fill the glass to the top.
