Form patties
Place the ground beef in a mixing bowl. Sprinkle the kosher salt, black pepper, and Worcestershire sauce (if using) over the meat. Gently mix with your hands until combined — do not overwork. Divide the meat into four equal portions (about 4 oz each). Lightly shape each portion into a patty roughly 3.5–4 inches wide and about 3/4 inch thick. Make a shallow dimple in the center of each patty with your thumb to reduce dome puffing during cooking.

Chill (optional)
If you have time, place the formed patties on a tray, cover, and refrigerate for 15–30 minutes to help them hold together when cooking.

Cook patties
Place patties on the hot surface. Cook without moving for 3–4 minutes to develop a crust. Flip once and cook another 3 minutes for medium doneness. For cheeseburgers: place a slice of cheddar on each patty about 1 minute before the end of cooking and cover briefly (with a lid or tent of foil) to melt the cheese. Adjust time for desired doneness: less time for rare, more for well done.

Rest patties
Transfer cooked patties to a plate and let rest for 3–5 minutes. Resting allows juices to redistribute and prevents the bun from getting too soggy.

Prepare vegetables
While patties cook, slice the tomato into 1/4-inch thick rounds and cut the red onion into thin rings. Wash and dry the lettuce leaves. Set the pickle slices out for assembly.

Make sauce
Combine mayonnaise, mustard, and ketchup in a small bowl and stir until smooth. Taste and adjust seasoning or ratios as preferred.

Assemble burgers
On the bottom bun, spread a spoonful of the sauce. Add lettuce, then the rested patty (cheese-side up if using cheese). Top with tomato slice(s), onion rings, and pickles. Add a little extra sauce on the top bun if desired. Close the burger with the top bun.

Serve
Serve burgers immediately with your choice of sides (fries, chips, or a small salad). If not eating right away, keep patties warm loosely tented with foil and assemble just before serving.
