Prep the Glass

    Chill and rim

    Place your serving glass (12–16 oz coupe or rocks glass) in the freezer for 5–10 minutes to chill. Pour the kosher salt (and sugar if using) onto a small plate. Rub a lime wedge around the glass rim, then dip the rim into the salt (or salt-sugar mix) to coat. Set the glass aside.

Make the Margarita

    Fill a cocktail shaker halfway with ice.

    Add 2 oz reposado tequila, 1 oz Cointreau, 1 oz fresh lime juice, 1/2 oz fresh lemon juice, 1/2 oz agave syrup and 2 dashes orange bitters to the shaker.

    Cap the shaker and shake vigorously for 12–15 seconds until the outside of the shaker is very cold and the drink is well-chilled and slightly diluted.

    If you prefer a smoother texture, double-strain into a glass: open the shaker and pour through a Hawthorne strainer and fine mesh strainer into the prepared chilled glass over fresh ice (for rocks) or neat (for coupe). For a blended-style Grand Margarita, pour the shaker contents into a blender with 1 cup of crushed ice and pulse until slushy, then transfer to the rimmed glass.

    Garnish with a lime wheel on the rim and an optional orange twist. Serve immediately.
