Method
Prepare Glasses
- 1
Rim the glasses
Place the kosher salt in a shallow dish. Run a lime wedge around the rim of each chilled margarita or rocks glass, then dip the rim into the salt so it adheres. Shake off excess and set glasses in the freezer to chill while you make the drink.
Make Cocktail Base
- 2
Measure and combine
In the pitcher or measuring container, combine 8 fl oz blanco tequila, 4 fl oz fresh lime juice, 2 fl oz orange liqueur, and 2 fl oz simple syrup. If using orange juice or agave nectar in place of some simple syrup, add 2 fl oz orange juice and/or 1 fl oz agave now and reduce simple syrup accordingly.
- 3
Chill mixture briefly (optional)
If your blender or ice is warm, place the combined liquor and juices in the refrigerator for 10–15 minutes to get cold; this helps the blender make a smoother frozen margarita.
Blend
- 4
Add ice
Add 8 cups of ice to a high-powered blender. Pour the cocktail base over the ice.
- 5
Pulse then blend
Start by pulsing 4–6 times to break up large ice chunks, then blend on high for 20–40 seconds until the mixture is smooth and slushy. If the mixture is too thick, add 1–2 tablespoons of cold water or a splash of orange juice and blend 5–10 seconds more. If too thin, add a cup of ice and re-blend.
- 6
Taste and adjust
Taste a small amount and adjust sweetness or acidity as needed: add 1/2 fl oz simple syrup (or 1/4–1/2 fl oz agave) to sweeten, or 1/2 fl oz lime juice to brighten. Blend briefly after adjustments.
