    Trim and cut

    Pat the alligator tail meat dry with paper towels. Trim away any silver skin or excess fat. Cut the meat into 1/2 - 3/4-inch thick strips or bite-size pieces for starter portions (about 2–3 inches long).

    Season and marinate: Place cut alligator pieces in a bowl. Add buttermilk, kosher salt, black pepper, and hot sauce (if using). Stir to coat, cover, and refrigerate for at least 1 hour and up to 4 hours. The buttermilk tenderizes and removes any gaminess.

Breading & Coating

    Set up a breading station: In a shallow bowl whisk the eggs until uniform. In a wide, shallow dish combine flour, cornstarch, cornmeal (if using), garlic powder, onion powder, smoked paprika, cayenne, black pepper, and kosher salt. Mix thoroughly so spices are evenly distributed.

    Dredge: Remove the marinated alligator pieces from the fridge. Working in batches, shake off excess buttermilk. First dredge each piece in the seasoned flour mixture, then dip into the beaten eggs, and finally coat again in the flour mixture, pressing lightly so a good crust adheres. Place breaded pieces on a wire rack while you heat the oil.

Frying & Finishing

    Heat oil: Pour the frying oil into a heavy-bottomed pot or Dutch oven to a depth of about 2–3 inches. Heat over medium-high until the oil reaches 350°F (175°C). If you don’t have a thermometer, test by dropping a small pinch of the flour mixture – it should sizzle and brown slowly.

    Fry in batches: Fry the breaded alligator pieces in small batches (avoid crowding) for 3 to 4 minutes per batch, until golden brown and the internal temperature of the meat reaches at least 145°F (63°C). Turn pieces once for even browning. Adjust the heat to maintain 325–350°F while frying.

    Drain and rest: Use a slotted spoon or spider to transfer fried pieces to a wire rack set over a baking sheet to drain. Sprinkle lightly with finishing salt and chopped parsley while still hot. Squeeze lemon over to taste just before serving.

Spicy Remoulade Dipping Sauce

    Make sauce: In a small bowl whisk together mayonnaise, Creole mustard, horseradish (if using), hot sauce, lemon juice, smoked paprika, garlic powder, salt, and black pepper until smooth. Taste and adjust heat or acidity. Chill until ready to serve.
