    Prepare glass

    Place a large ice cube or sphere in a chilled old-fashioned glass (or rocks glass). Set aside. If you prefer the glass chilled, fill it with ice water for a few minutes while you mix, then discard before adding the large ice cube.

    Build and stir

    In a mixing glass add 1 cup of ice. Pour in 2 oz añejo (aged) rum, 1 oz sweet vermouth, 0.5 oz cognac, 0.25 oz maraschino liqueur, 0.25 oz simple syrup, 2 dashes Angostura bitters and 1 dash orange bitters.

    Stir to chill and dilute

    Using a bar spoon, stir the mixture briskly for 20–30 seconds (about 20–30 rotations) until the outside of the mixing glass feels very cold and the drink is properly diluted (roughly 20–25% dilution from the ice).

    Strain and finish

    Discard the ice water from the serving glass if used. Strain the stirred mixture into the prepared old-fashioned glass over the large ice cube.

    Garnish

    Express the oils of an orange peel over the surface by holding peel skin-side down and giving it a firm twist about 3–4 inches above the drink. Rub the peel around the rim, then drop it into the glass as garnish.

    Serve

    Serve immediately. Sip slowly to enjoy the layered flavors of aged rum, vermouth and cognac balanced by the maraschino and bitters.
