If using a fresh banana, peel and mash half a ripe banana in a small bowl until smooth. If desired, press through a fine sieve for a smoother puree. If using bottled banana puree, measure 1/2 banana worth (about 0.5 each).

Combine ingredients
In a cocktail shaker, add the mashed banana (or banana puree), aged rum, banana liqueur, Kahlúa, heavy cream, half-and-half, and simple syrup (if using).

Add ice & shake
Fill the shaker with ice (about 1 cup). Secure the lid and shake vigorously for 15–20 seconds until the outside of the shaker is frosty and the mixture is well chilled and slightly thickened.

Strain
Double-strain the cocktail into a chilled coupe or rocks glass using a Hawthorne strainer and a fine-mesh sieve to remove banana solids and ice shards. For a thicker, frozen-style Dirty Monkey, instead pour the shaken mixture into a blender with 1–1.5 cups crushed ice and blend until smooth, then pour into the glass.

Sprinkle the grated dark chocolate or chocolate shavings over the top of the cocktail and float a banana slice on the rim or surface. Serve immediately.
