Muddle mint and sugar
Place the 12 fresh mint leaves and 2 tbs granulated sugar in a sturdy highball glass or cocktail shaker. Use a muddler (or the back of a wooden spoon) to gently press and twist the mint into the sugar for 15–20 seconds until the leaves release their aroma but are not torn to bits.

Add lime
Squeeze 1 oz fresh lime juice (about half a lime) into the glass. Drop in the used lime wedge (or an additional wedge) and give one short, firm muddle — just to mix the juice with the mint-sugar paste and release a bit more oil from the lime peel.

Top with soda
Top the cocktail with 3 oz club soda. Stir once gently to combine — avoid over-stirring so the soda stays fizzy.

Adjust sweetness and chill
Taste and, if desired, add up to 1 tsp additional sugar or a splash more lime juice to balance sweetness and acidity. Add 4 ice cubes to keep the drink cold if crushed ice has melted during preparation.

Gently slap 1 mint sprig between your palms to activate the oils and place it on top of the drink. Garnish the rim with 1 lime wheel. Serve immediately with a straw, and encourage sipping through the mint for aroma.
