Cocktail

Method

Cocktail

  1. 1

    Prepare glass

Fill a hurricane glass or large Collins glass with crushed ice to chill while you mix the cocktail.

  2. 2

    Mix ingredients

In a cocktail shaker or mixing glass, add the light rum (1.5 oz), dark rum (0.5 oz), coconut rum (0.5 oz) if using, banana liqueur (0.5 oz), fresh orange juice (2 oz), pineapple juice (2 oz), fresh lime juice (0.25 oz), and one dash of angostura bitters (optional). Add a small handful of crushed ice to the shaker (about 1/2 cup) to briefly chill while shaking.

  3. 3

    Shake

Secure the shaker and shake vigorously for 8–10 seconds until the outside of the shaker is cold and the ingredients are well combined and slightly frothy.

  4. 4

    Assemble

Discard the ice from the chilled glass if desired and fill the glass with fresh crushed ice (about 1 cup). Strain the shaken mixture over the crushed ice into the glass.

  5. 5

    Add grenadine

Slowly pour the grenadine (0.25 oz) down the inside edge of the glass or over the back of a spoon so it sinks and creates a sunrise effect toward the bottom of the drink.

Garnish & Serve

  1. 6

Thread the pineapple wedge and maraschino cherry onto a cocktail pick and rest on the rim of the glass. Add a lime wheel if using. Optionally insert a straw and serve immediately with a small stirrer so the guest can combine layers if desired.
