Prep & Potatoes (if using)

    Prep fish and potatoes

    Pat the fish fillets dry with paper towels. Season both sides evenly with 1 tsp kosher salt and 1 tsp black pepper. Lightly dust each fillet with 1 tablespoon flour, shaking off excess. If making potatoes, preheat oven to 425°F (220°C). Toss halved baby potatoes with 1 tbsp olive oil, 1/2 tsp black pepper and a pinch of salt; spread on a baking sheet and roast for 20–25 minutes until tender and golden, tossing once halfway.

Searing the Fish

    Sear fillets

    Heat a large nonstick or stainless steel skillet over medium-high heat. Add 1 tbsp olive oil and 1 tbsp butter. When butter foams and oil shimmers, place fillets presentation-side down (skin-side up if skinless) without crowding. Sear 2–3 minutes until a golden crust forms. Carefully flip and reduce heat to medium. Cook another 2–4 minutes until fish is opaque and flakes easily (internal temperature ~135–140°F). Transfer fillets to a warm plate and tent loosely with foil.

Pan Sauce & Finish

    Sweat aromatics

    Reduce heat to medium-low. Add remaining 2 tbsp butter to the skillet. When melted, add the minced shallot and cook 1–2 minutes until translucent. Add the 2 minced garlic cloves and cook 30 seconds until fragrant, stirring constantly so garlic does not brown.

    Deglaze

    Pour in 1 cup dry white wine (or stock) to deglaze the pan, scraping any browned bits from the bottom with a wooden spoon. Increase heat to medium and simmer for 3–4 minutes until the liquid is reduced by about half.

    Finish sauce

    Stir in 2 tablespoons fresh lemon juice and 1 ounce heavy cream. Simmer gently 1–2 minutes to thicken slightly. If using, add 2 teaspoons drained capers and stir. Taste and adjust seasoning with a pinch of salt and more lemon if desired. Off the heat, whisk in 1–2 tablespoons cold butter (already included in butter count) or swirl remaining butter in the sauce for gloss if needed.

    Serve

    Return the seared fish to the skillet or plate and spoon the warm sauce over each fillet. Sprinkle with 2 tablespoons chopped flat-leaf parsley. Serve immediately with roasted potatoes or a simple green salad.
