Prepare the Fries

Peel and cut the potatoes into thin strips. Rinse them under cold water to remove excess starch, then dry thoroughly.

Fry the Potatoes

Heat olive oil in a deep fryer or a large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels. Season with salt and black pepper.

Cook the Steak

Season the sirloin steaks with salt and black pepper. Heat a skillet over medium-high heat and add a tablespoon of olive oil. Cook the steaks for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest.

Make the Red Wine Jus

In the same skillet, add the red wine and beef stock. Scrape up any browned bits from the bottom of the pan. Add fresh thyme and simmer until the sauce is reduced by half, about 10 minutes. Strain if desired.

Prepare Lemon Herb Butter

In a small bowl, mix softened butter with lemon juice and chopped parsley.

Serve

Slice the steak and serve with herb fries. Drizzle the red wine jus over the steak and add a dollop of lemon herb butter on top.
