Preparation Steps
Prepare the Bacon
Preheat your oven to 400°F (200°C). Place slices of North country bacon on a baking sheet lined with parchment paper and bake until crispy, about 15-20 minutes. Once done, remove from the oven and let it cool before crumbling into small pieces.
Prepare the Spicy Pimento Cheese
In a mixing bowl, combine 1 cup of spicy pimento cheese. If you want to make it spicier, consider adding some hot sauce or cayenne pepper. Mix well and set aside.
Shuck the Oysters
Carefully shuck each Gulf oyster, keeping the oyster in its shell and discarding the top shell. Place the oysters on a plate or in a shallow baking dish.
Assemble the Dish
On each oyster, spoon a generous amount of spicy pimento cheese. Top with crumbled bacon and a sprinkle of chopped chives.
Serve
Serve the assembled oysters immediately. Optionally, you can serve them with lemon wedges for an extra zesty touch.
