Traditional Potato Fries

    Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.

    Cut potatoes into sticks

    Wash 4 Russet potatoes. Cut into evenly sized fries about 1/4 inch thick.

    Soak and drain

    Rinse the cut potatoes and soak in cold water for 20 minutes to remove surface starch. Drain thoroughly.

    Dry and coat with starch

    Pat fries dry with towels. Toss with 1 tablespoon cornstarch until evenly coated.

    Oil and season

    Return fries to a bowl. Drizzle with 2 tablespoons olive oil. Sprinkle 1 teaspoon salt, 0.5 teaspoon black pepper, 0.5 teaspoon paprika, and 0.5 teaspoon garlic powder. Toss to coat.
