Churro Dough

    Make the dough

    In a medium saucepan, combine water, neutral oil, salt, sugar, and vanilla. Bring to a simmer, then remove from heat. Stir in the all-purpose flour until a smooth, cohesive dough forms. Let the dough rest 5 minutes.

Churro Frying

    Heat oil and pipe churros

    Fill a deep pot with the vegetable oil for frying and heat to 375°F (190°C). Load the dough into a piping bag fitted with a large star tip. Pipe 4–5 inch strips into the hot oil, cutting with scissors. Fry in batches until deep golden and crisp, about 2–3 minutes per batch. Remove with a slotted spoon and drain on paper towels.

Cinnamon Sugar Dusting

    Coat churros in cinnamon sugar

    While churros are still warm, roll or toss them in the cinnamon-sugar mixture until evenly coated.

Serving

    Plate and serve with ice cream

    Place two scoops of vegan vanilla ice cream on each serving plate. Arrange churros on or beside the ice cream and finish with an extra dusting of cinnamon sugar if desired.
