    Warm the prime rib

    Gently reheat the house-smoked prime rib slices in a skillet over medium-low heat until warmed through, about 2–3 minutes. Set aside any juices released.

    Caramelize onions

    In a large skillet, melt 1 tablespoon of butter with a splash of olive oil over medium heat. Add onions and a pinch of salt; cook, stirring occasionally, until deeply caramelized and golden, about 8–10 minutes.

    Cook peppers

    Add poblano and bell peppers to the onions. Sauté over medium heat until peppers are tender and slightly blistered, about 6–8 minutes. Stir in garlic powder, remaining salt, and pepper.

    Roast corn

    If using fresh corn, roast kernels in a dry skillet or over direct heat until lightly charred for 3–5 minutes. Fold into the pepper-onion mixture and heat through.

    Warm cheese sauce

    Gently warm the cheese sauce in a small saucepan over low heat until smooth and pourable, stirring occasionally.

    Toast rolls

    Lightly toast the hoagie rolls on a hot grill or in a toaster oven until just crisp.

    Assemble the sandwiches

    Spread a thin layer of cheese sauce on the bottom halves of the rolls. Layer the warmed prime rib, then top with the pepper-onion-corn mixture. Spoon additional cheese sauce over the filling and close with the roll tops.

    Cut each sandwich in half if desired and serve immediately.
