Prep the fruit and herbs
Rinse the strawberries and mint. Hull the strawberries and gently tear or bruise the mint leaves to release aroma.

Muddle the base flavors
In a large pitcher, add the hulled strawberries and mint leaves. Use a muddler or the back of a spoon to muddle gently until juices release and the mint fragrance intensifies.

Whisk the lemon and agave
In a separate bowl, whisk together fresh lemon juice and agave nectar until well combined and the sweetener dissolves.

Build the drink
Add cold water to the pitcher. Pour in the lemon–agave mixture and stir well to evenly distribute sweetness and brightness.

Chill with ice
Add ice cubes to the pitcher and give a final stir to chill the mixture evenly.

Top and serve
If using sparkling water, add it now to top up and lightly stir. Taste and adjust sweetness with a touch more agave if desired. Pour into glasses over extra ice and garnish with a mint sprig and a lemon wheel.
