Preparation and season
Remove elk chops from refrigerator 20 minutes before cooking. Pat dry with paper towels. Season evenly on all sides with kosher salt, pepper, garlic powder, and chopped thyme. Lightly brush with olive oil.

Roast
Roast for 20-25 minutes, turning once halfway, until vegetables are caramelized and tender. Keep warm until plating.
Sweet Potato Mash

Cook potatoes
Place cubed sweet potatoes in salted water and boil 15-20 minutes until very tender. Drain well.

Demi Glace (GF)

Make base
In a small saucepan, heat olive oil over medium heat. Add shallot and garlic; sauté until translucent and fragrant, about 3-4 minutes. Stir in tomato paste and cook 1-2 minutes to deepen flavor.

Deglaze and reduce
Deglaze with red wine; simmer until reduced by about half. Add beef stock and thyme; simmer 15-20 minutes to concentrate flavors.

Thicken
Remove thyme. Whisk cornstarch slurry (1 tbsp cornstarch with 2 tbsp water) into the glaze; simmer until thickened to a glaze consistency. Season with salt and pepper to taste.
