Cornbread Batter

Prep and preheat
Preheat the oven to 425°F (220°C). Place a 9-inch cast-iron skillet in the oven to preheat while you prepare the batter.

In a large bowl, whisk together the dry ingredients: flour, cornmeal, sugar, baking powder, baking soda, and salt.

In a separate bowl, whisk the buttermilk, eggs, and melted butter until smooth.

Pour the wet ingredients into the dry ingredients and whisk just until combined. Fold in the shredded aged cheddar cheese and chopped green chiles, being careful not to overmix.

Pour the batter into the hot skillet and spread evenly.

Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Let the cornbread rest for 5-10 minutes before slicing into wedges.

Make butter
In a small bowl, combine softened butter, honey, and minced chipotle peppers until smooth and evenly blended.
