    Prep and heat

    In a large heavy pot, heat the olive oil over medium heat until shimmering.

    Sauté aromatics

    Add the diced yellow onion and minced garlic; cook 4–5 minutes, until onions are translucent and fragrant.

    Add poblanos

    Stir in the diced poblano pepper; cook 3–4 minutes until slightly softened.

    Brown the bison

    Increase heat to medium-high; add the ground bison and break it up with a spoon; cook until browned and no pink remains, about 6–8 minutes.

    Season

    Sprinkle in the ground cumin, smoked paprika, chili powder, and dried oregano. Cook 1 minute, stirring constantly to bloom the spices.

    Add beans, corn, and chiles

    Stir in the black beans, corn kernels, and roasted green chiles; cook 2–3 minutes to combine flavors.

    Simmer

    Pour in the beef broth; bring to a gentle simmer, then reduce heat. Simmer uncovered for 20–25 minutes, until the chili thickens to your liking.

    Finish with cheese

    Stir in the shredded green chile cheddar cheese; cook just until melted and silky, about 1–2 minutes.

    Garnish

    Fold in the chopped chives and season with salt and pepper to taste as needed.
