Muddle orange and sugar
In a shaker, muddle the fresh orange segments with 1 teaspoon brown sugar until the oils are released and the sugar begins to dissolve.
Add spirits
Add 60 ml Bingham bourbon and 22 ml orange liqueur to the shaker. Fill with ice and shake vigorously for 10–15 seconds until well-chilled.
Strain
Strain the mixture into a rocks glass filled with fresh ice.
Top with soda
Top with 60 ml soda water to add a light, bubbly finish.
Brûlée top
Evenly sprinkle 1 teaspoon brown sugar over the surface. Use a culinary torch to caramelize the sugar, forming a crisp brûlée top. Allow to set briefly before serving.
