Chop and set up

Chop the white chocolate into small, uniform pieces so it melts evenly. Place the chopped chocolate in a heatproof bowl. Measure the cream, butter, vanilla and salt and have them ready.

Heat cream and butter

In a small saucepan, heat the heavy cream and unsalted butter over medium heat until it just begins to simmer and small bubbles form around the edge (do not boil). Remove from heat immediately.

Make ganache

Pour the hot cream-and-butter mixture over the chopped white chocolate. Let sit undisturbed for 1–2 minutes to soften the chocolate, then gently stir with a rubber spatula from the center outward until smooth and glossy. If needed, place the bowl over a pot of barely simmering water (double boiler) and stir until fully melted but do not overheat. Stir in vanilla and sea salt. If the ganache seems very thick, stir in up to 1 tsp melted cocoa butter or neutral oil to loosen slightly.

Cool slightly

Allow the ganache to cool at room temperature for 10–15 minutes until it thickens slightly but is still pourable for molding or spreading.

Make fruit purée

Combine the raspberries, pomegranate juice, granulated sugar and lemon juice in a small saucepan. Cook over medium heat, stirring occasionally, until raspberries break down and mixture becomes saucy, about 5–7 minutes.

Thicken and finish purée

Mix the cornstarch with the teaspoon of water to make a slurry. Stir the slurry into the simmering fruit mixture and cook 1 minute more until it slightly thickens. Taste and adjust sweetness. Remove from heat and pass the mixture through a fine-mesh sieve into a bowl to remove seeds (optional if you want seedless swirl). Press with the back of a spoon to extract as much purée as possible. Let cool to room temperature, then refrigerate briefly until it is cool but still spoonable (about 10–15 minutes). If you prefer a stronger raspberry color/tang, stir in the crushed freeze-dried raspberry powder.

Prepare inclusions

If using fresh arils, pat them dry. Reserve a few whole arils for garnish and set the rest aside to sprinkle into the chilled chocolate if desired. Keep the freeze-dried pieces ready for topping.

Incorporate swirl

Pour the slightly cooled white chocolate ganache into your chosen mold(s) or spread it into a shallow pan lined with parchment (for slices). Dollop spoonfuls of the cooled raspberry-pomegranate purée across the surface. Use a small skewer or the tip of a knife to gently swirl the purée into the white chocolate to create marbling — do not overmix or the color will disappear. If making filled chocolates, pipe a thin layer of ganache, add a small spoon of purée, then top with more ganache and skim to level.

Add inclusions

Scatter a few pomegranate arils and a pinch of crushed freeze-dried raspberries into place on each molded piece or across the top of the spread. Leave some pieces plain for contrast. If using edible gold leaf, apply tiny pieces after the surface has set but is still tacky so it adheres.

Setting, finishing and serving

Set the chocolates

Allow the molded or spread chocolate to set at cool room temperature until firm (about 1–2 hours) or place in the refrigerator for 20–30 minutes to speed setting. If refrigerated, let rest at room temperature 5–10 minutes before unmolding to prevent condensation.

Unmold and trim

Carefully unmold chocolates or lift the parchment and slice the slab into bars or squares using a warm knife (dip in hot water and wipe dry between cuts for clean edges).

Garnish and store

Dust with additional crushed freeze-dried raspberries or place reserved arils on top of pieces intended for immediate serving. Store finished chocolates in an airtight container in a cool, dry place (ideally 60–68°F / 16–20°C) for up to 1 week or refrigerated for up to 2 weeks (bring to room temperature before serving).
