Method
Truffle Mayonnaise
Combine base
In a medium bowl, add 1 cup mayonnaise, 1 tsp fresh lemon juice and 1/2 tsp Dijon mustard. Whisk until smooth and homogenous.
Add truffle flavor
Slowly whisk in 1 tablespoon truffle oil a few drops at a time, tasting as you go until the desired intensity is reached. Stir in 1 tablespoon finely grated truffle if using for a stronger aroma.
Season and rest
Season the mayonnaise with 1/4 tsp fine sea salt and 1/8 tsp freshly ground black pepper. Cover and refrigerate at least 30 minutes to allow flavors to meld (up to 24 hours).
Prosciutto Powder
Prepare prosciutto
Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper. Lay 3 oz thin prosciutto slices flat on the sheet without overlapping. Sprinkle very lightly with 1/4 tsp granulated sugar if using — this helps with crisping and browning.
Bake until crisp
Bake in the preheated oven for 20–30 minutes, checking after 15 minutes. Prosciutto should become fully crisp but not burnt. Remove when crisp and allow to cool completely on the sheet (about 10 minutes).
Powder the prosciutto
Once cooled, break the crisp prosciutto into pieces and pulse in a spice grinder, clean coffee grinder, or food processor until it reaches a fine powder. Sift through a fine mesh if you want an ultra-fine dust. Store in an airtight container until assembly.
Assembly & Garnish
Plate and finish
Spoon or pipe the truffle mayonnaise onto crostini or chips. Sprinkle a pinch of prosciutto powder over each portion for an umami burst. Finish with a few pinches of minced chives, a light crack of black pepper, and a few flakes of sea salt. Serve immediately.
Storage
Store leftover truffle mayonnaise in an airtight container refrigerated for up to 5 days. Keep prosciutto powder in an airtight container at room temperature for up to 1 week (longer if fully dehydrated and stored dry).
